Creole Applesauce Cake with Brandy or Rum

The original recipe as posted called for the raisins and dates to be soaked in brandy or rum,but you can substitute Cognac or Kahlua if desired. Also, you can bake the cake in a 12 cup Bundt pan at 375 F. adding an extra cooking of approximately 15-20 minutes.

Ingredients
  1. 5 ounces ( 1 cup) raisins
  2. 8 ounces (1 cup, packed) pitted soft dates (each date cut into 3 or 4 pieces
  3. ⅓ cup dark rum or brandy
  4. 2 cups sifted all-purpose flour
  5. 1 tablespoon cornstarch
  6. 2 teaspoons baking soda
  7. 1 teaspoon cinnamon
  8. ½ teaspoon mace or nutmeg
  9. ½ teaspoon salt
  10. 1 tablespoon powdered, unsweetened cocoa
  11. ¼ pound (1 stick) butter
  12. 1 cup sugar
  13. 2 eggs
  14. 15 ounces (1 ½ cups) applesauce
  15. 7 ounces (2 cups) pecan halves or large pieces
  16. Optional: Additional rum or brandy
Instructions
  1. Place raisins and dates in a 2-cup jar with a leakproof cover. Add rum or brandy. Let stand for several hours, or overnight or longer if you wish, turning jar occasionally from side to side and top to bottom.
  2. Adjust rack to center of oven. Preheat oven to 375 degrees. Butter a 9 x13x 2-inch pan. Dust it with fine, dry bread crumbs and set aside.
  3. Sift together the flour, cornstarch, baking soda, cinnamon, nutmeg, salt, and cocoa. Set aside.
  4. In large bowl of electric mixer beat the butter to soften it a bit. Add the sugar and beat for a minute or two, scraping the bowl occasionally with a rubber spatula. Add eggs one at a time, beating after each until thoroughly incorporated.
  5. On low-speed mix in half of the dry ingredients, then the applesauce, and finally the remaining dry ingredients, scraping the bowl with the rubber spatula as necessary and beating only until incorporated after each addition.
Notes
  1. Can be baked in a 12 cup Bundt pan, Add an extra 20 minutes to the baking time at 375F.
